Need a splash of red on your holiday table? Or a quick hostess gift? If you like onions
give the following super easy recipe a try.

Recipe:
1 large onion, thinly sliced, preferably red (if you have a mandoline, go for it)

Brine:
1/2 cup cider vinegar
1 cup water
1 T. sugar
1 1/2 tsp. salt (I used pickling salt )

Stir brine ingredients together until salt and sugar are dissolved.  Pour over onion and
let stand at room temperature for about 45 minutes.  Ready to serve.  Refrigerate.  This
should fit in a pint jar though you may have some brine leftover.
Will work with any onion but red onions are particularly pretty, especially at this time of
the year.  When the onion was almost used up I added another onion to the same
brine.

I’ll probably just make a double batch next time with 2 onions.  We seem to use them up fast on salads and sandwiches. The longer the red onions sit in the brine the more color leaches into the liquid. The picture shows the pretty rose-colored liquid. It is about a week old.
